Potato skin boats

Heart Smart Gluten Free Low Sodium

Potatoes are a healthful source of carbohydrate, providing fiber, potassium and other nutrients. Just be sure to choose your toppings wisely too!

Ingredients

nonstick cooking spray
6 small russet potatoes
1/3 cup extra-virgin olive oil
1 teaspoon no-salt garlic and herb seasoning
Optional toppings:* salsa, sour cream, shredded cheese, crumbled bacon, chili, beef stew, guacamole, chopped chives or butter

Directions

  1. Preheat oven to 375 F.
  2. Spray a baking sheet with nonstick cooking spray.
  3. Pierce each potato with a fork and brush lightly with olive oil. Bake for 40 to 45 minutes.
  4. Cut each potato in half and scoop out middle, leaving about 1/4 inch of potato attached to skin. Brush inside of each potato with olive oil and sprinkle with seasoning. Return to oven to bake for another 10 to 15 minutes.
  5. Serve warm with optional toppings, if desired.

If you don’t have a use for the leftovers right away, freeze them to use on a busy weeknight.
