If you love grilling but need to be mindful of your saturated fat intake, a chicken breast is a great swap for a grilled steak or a burger. Here’s an easy, delicious grilled chicken recipe that’s gluten free and low sodium. Grill some extra and add to salads and sandwiches for extra flavor for your work from home lunches.
Ingredients
1 tablespoon + 1 teaspoon Dijon mustard, divided
1 tablespoon + 1 teaspoon extra-virgin olive oil, divided
2 teaspoons chopped fresh rosemary
4 4-ounce boneless, skinless chicken breast halves
3 tablespoons mayonnaise
Directions
1. Preheat grill.
2. In a small bowl, combine 1 teaspoon mustard, 1 tablespoon oil and rosemary. Stir. Brush over chicken. Place chicken on grill. Cook 6 to 8 minutes or until a cooking thermometer inserted into the center of a chicken breast reaches 180 F.
3. In a small bowl, combine 1 tablespoon mustard, 1 teaspoon oil and mayonnaise. Stir.
4. Serve mustard cream (made in step 3) with warm chicken breasts.
Makes 4 servings
