Slow cooker turkey
Many people, including lots of Allina Health employees, work on Thanksgiving. Here's an idea for holiday workers, or those of you who have a small crowd to feed, for a quick and easy method of cooking your Thanksgiving turkey. This low-sodium, heart smart recipe uses a bone-in turkey breast and serves four. Toss together a few quick sides and dinner can be on the table in minutes when you get home from
work or shopping.
Ingredients
1 teaspoon ground sage
½ teaspoon ground black pepper
1 teaspoon garlic powder
1 medium apple, seeds removed and cut into 8 slices
1 small sweet onion, cut into 8 wedges
2 celery ribs, each cut into 4 pieces
1 large carrot, cut lengthwise and then into 4 pieces
2 medium potatoes, each cut into 4 pieces
1 cup dried cranberries
2 teaspoons extra-virgin olive oil, divided
5-pound bone-in turkey breast
1 cup low-sodium vegetable broth
Directions
- In a small bowl, combine sage, black pepper and garlic powder. Set aside.
- In a large bowl, combine apple, onion, celery, carrot, potatoes, dried cranberries and 1 teaspoon oil.
- Rub turkey breast with 1 teaspoon oil. Then rub inside and outside of turkey with spice blend.
- Stuff turkey breast with fruit and vegetable mixture (not all will fit).
- Place stuffed turkey breast in slow cooker. Add vegetable broth. Place remaining fruit and vegetable mixture around turkey.
- Cover and cook on high for 5 to 6 hours, until a cooking thermometer inserted into the thickest part of the breast reaches 165 degrees F.
