Heart Smart Gluten Free Low Sodium

Frozen green beans are a great substitute for fresh during the off-season—and they’re just as healthful as long as you don’t overcook them! 

Ingredients

1 pound frozen green beans
1 tablespoon extra-virgin olive oil
1/2 cup dried cranberries
2 tablespoons honey
1 tablespoon orange juice
2 tablespoons slivered almonds
1 teaspoon freshly grated orange peel

Directions

  1. In a small saucepan, steam green beans for 5 to 7 minutes, stirring occasionally. Drain. (You can also cook them in the microwave on high for 4 to 5 minutes.)
  2. Meanwhile, heat oil in a small nonstick skillet over medium heat.
  3. Add cranberries, honey and orange juice. Cook, stirring gently, until cranberries are softened and liquid is syrupy.
  4. Stir in almonds and orange peel. Toss mixture with green beans.
  5. Serve warm.
