Cool cucumber soup

Heart Smart Low Sodium

This soup may seem high in fat but most of it is the good kind! Healthful fats from avocado may help to protect against heart disease, stroke and type 2 diabetes.

Ingredients

1 cup fat-free vegetable broth
3/4 cup low-fat Greek yogurt
1 cup low-fat buttermilk
1/2 teaspoon ground coriander
4 cucumbers, peeled and diced, divided
1 avocado, peeled and diced
4 green onions, thinly sliced, divided
2 tablespoons chopped fresh dill, chopped
4 teaspoons lemon juice

Directions

  1. In a medium bowl, whisk together vegetable broth, yogurt, buttermilk and coriander. Set aside.
  2. Place 1/2 of the diced cucumber, all of the diced avocado, 1/2 of the sliced green onion and 2 tablespoons dill in a blender. Blend until smooth.
  3. Pour blended mixture in the bowl with the yogurt mixture. Add the remaining cucumber, green onion and lemon juice. Mix well.
  4. Cover and chill in the refrigerator for at least 2 hours.
  5. Serve chilled.
