The fruit, vegetables and nuts in this salad have vitamins, minerals, antioxidants and fiber that help keep your body functioning well.
Ingredients
3 tablespoons apple cider vinegar
2 tablespoons orange juice
2 teaspoons spicy brown mustard
½ cup extra-virgin olive oil
1 tablespoon dark brown sugar
½ teaspoon dehydrated onion flakes
1 teaspoon poppy seeds
1 small head red cabbage, grated (about 3 cups)
1 pound carrots, grated (about 3 cups)
1 cup raisins
½ cup chopped walnuts
Directions
1. In a small, container with a locking lid, add the first 7 ingredients. Close the lid tight. Shake and set aside.
2. In a medium bowl, add the cabbage, carrots and raisins. Pour on the dressing made in step 1. Stir to combine.
3. Place in the refrigerator until ready to serve. Add the walnuts just before serving. Enjoy!
