Microwave black bean soup

Heart Smart Gluten Free Low Sodium

This soup is packed with fiber to help you feel fuller longer and keep your digestive system healthy.


3 tablespoons extra-virgin olive oil
3/4 cup diced onion
2 cloves garlic, minced
1/2 cup diced red bell pepper
1 cup sliced mushrooms
2 cups low-sodium vegetable broth
1 15-ounce can low-sodium black beans
1/4 cup chopped cilantro
1/2 teaspoon ground coriander


  1. In a large microwave-safe bowl, combine the oil, onion, garlic, red bell pepper and mushrooms.
  2. Cover bowl with plastic wrap and microwave on high for 6 minutes, stirring every 2 minutes.
  3. Add the remaining ingredients and cover the bowl.
  4. Microwave on high for 4 to 6 minutes, stirring every 2 minutes, until steaming hot. Enjoy!
