Oven-roasted garlic cauliflower

If you haven’t tried roasting your vegetables, you’re in for a treat! Avoid boredom in your healthy lifestyle by trying new ways to prepare healthful foods.


4 cloves garlic, minced
1 1/2 teaspoons extra-virgin olive oil
1 tablespoon fresh lime juice
2 teaspoons lime zest
1/4 cup chopped fresh cilantro
1 1/2 pounds (about 6 cups) cauliflower florets


  1. Preheat oven to 450 F.
  2. In a gallon-size zip-close bag, combine the garlic, olive oil, lime juice, lime zest and cilantro. Seal bag and shake until well-mixed. Add cauliflower, seal bag and shake once more until cauliflower is well-coated. Pour into a medium-sized casserole dish.
  3. Bake for 20 to 30 minutes, until lightly browned. Cauliflower is done when florets are tender.
  4. Serve warm.
