Microwave butternut squash steaks

Gluten Free Low Sodium

These "steaks" are high in vitamin A, a nutrient for healthy hair, eyes and skin.

Ingredients:

3 tablespoons extra-virgin olive oil, divided
1 sprig fresh thyme
5 cloves garlic, minced
1 tablespoon fresh lemon juice
2 tablespoons finely chopped sweet onion
1 large (3 pound) butternut squash with a large neck

Directions:

  1. In a small microwave-safe bowl, combine the thyme, garlic, lemon juice, onion and 2 tablespoons of oil.
  2. Cover the bowel with plastic wrap and microwave on high for 1 minute. Stir to combine and set aside.
  3. Cut the neck off the squash. (Save the bottom of the squash for another recipe.) Peel and slice it lengthwise into four 1/2 inch-thick steaks.
  4. Place the steaks in a 9 x 13 microwave-safe pan. If possible, try not to overlap the steaks. Brush the steaks with 1 tablespoon of oil.
  5. Cover the pan with plastic wrap and microwave for 4 to 6 minutes, flipping every 2 minutes.
  6. Pour the flavored oil over the steaks and cover the pan.
  7. Microwave for 2 to 3 minutes until soft. Remove the thyme sprig and drizzle the oil in the pan over each steak. Enjoy warm!
