Green bean, potato and tomato dish

This dish is full of vitamin C, a nutrient that helps to keep your skin healthy and beautiful!

Ingredients

1 1/2 tablespoons extra-virgin olive oil
2 cloves garlic, minced
3/4 cup diced red potatoes (skins left on)
1 pound frozen green beans
1/3 cup water
1 1/2 teaspoons ground basil
6 ounces plum tomatoes, skins removed and coarsely chopped
1/4 teaspoon freshly ground black pepper
Optional: dash of hot sauce*

Directions

  1. Heat oil in a large skillet over medium-high heat. Add garlic and cook for 30 seconds. Add potatoes and beans and sauté for 1 minute. Add water. Stir. Cover and cook for 4 to 6 minutes or until beans are crisp tender.
  2. Add basil and tomatoes. Stir. Cover, reduce heat to medium and cook for 5 to 6 minutes or until tomatoes have softened, stirring occasionally.
  3. Season with black pepper. Add a dash of hot sauce, if desired.*
  4. Serve warm.
