Four-ingredient mashed potatoes

When you think of potatoes, think of potassium! Potassium helps your body get rid of extra salt (sodium), which can help control blood pressure levels.

Ingredients

1/4 cup sour cream
1/4 cup fat-free milk
3 pounds potatoes (russet or golden)
1/3 cup extra-virgin olive oil

Directions

  1. Let your kids help measure out the sour cream and milk. Set aside at room temperature for at least 30 minutes.
  2. Meanwhile, peel and cut the potatoes into 1-inch (similar-size) pieces. As you finish cutting, ask your kids to help place them in a medium saucepan. Add enough water to cover the potatoes.
  3. Bring potatoes to a boil, turn down heat to medium-high and simmer (covered) for 15 to 20 minutes. Potatoes should be soft and “mashable.” Drain.
  4. Let your kids add the sour cream, milk and oil. Mash by hand or use an electric mixer to blend until potatoes are smooth and creamy. Serve warm.

If you need to limit your potassium intake, you can place the peeled, cut potatoes in a pan of water in the refrigerator for at least 4 hours. Drain and rinse with water. Then add fresh water to cover the potatoes and continue with step 3.
