Asparagus with garlic balsamic drizzle

Asparagus is an excellent source of nutrients that can help to fight inflammation.

Ingredients

1 pound asparagus, trimmed
1 tablespoon canola oil
2 cloves garlic, minced
1 teaspoon extra-virgin olive oil
1/2 cup balsamic vinegar

Directions

  1. Adjust oven rack at least 6 inches from broiler element and heat broiler to high. Line a baking sheet with aluminum foil. Set aside.
  2. In a large zip-close bag, combine trimmed asparagus with canola oil. Seal and shake gently until well-coated. Pour asparagus onto the lined baking sheet, making sure spears are in a single layer.
  3. Broil for 7 to 10 minutes or until tender and charred, stirring halfway through cooking.
  4. While asparagus is cooking, combine garlic and olive oil in a small saucepan over medium-high heat. Cook for 1 to 2 minutes. Stir. Transfer into a small bowl.
  5. Add the vinegar to the saucepan and bring to a boil. Turn down heat to simmer for 4 to 5 minutes or until reduced to a slightly thickened syrup, stirring often. Add garlic to syrup and stir.
  6. Remove asparagus from oven and drizzle with mixture made in steps 4 and 5. Serve warm.
