Yogurt-dressed cucumber salad

2 medium cucumbers, sliced
1/4 cup minced sweet onion
1 cup non-fat plain Greek yogurt
1 1/2 teaspoons dried dill weed (You can also use 1 tablespoon fresh dill weed.)
1/8 teaspoon freshly ground black pepper


  1. In a medium bowl,combine the cucumber slices and minced onion. Toss.
  2. In a small bowl, combine yogurt, dill weed and black pepper. Mix until well-blended.
  3. Add mixture made in step 2 to the cucumber and onion. Stir. Cover and place in the refrigerator for at least 1 hour.
  4. Remove from refrigerator, stir and serve chilled.

Makes 4 servings
