Warm zucchini and onion salad

Zucchini is an excellent source of potassium, a mineral that may help to improve your blood pressure.


1 tablespoon extra-virgin olive oil
1 cup diced onion
2 1/2 cups grated unpeeled zucchini
1 tablespoon minced fresh basil
1/4 cup fat-free plain Greek yogurt


  1. Heat oil in skillet over medium-high heat. Add onion. Cook for 2 to 3 minutes.
  2. Add zucchini. Cook for 2 to 3 minutes.
  3. Add basil. Cook for 1 minute.
  4. Add yogurt and mix well for 1 minute. Remove skillet from heat.
  5. Serve warm.
