Spinach and bean salad

Heart Smart Gluten Free Low Sodium

This fiber-filled salad has fresh vegetables and beans for a healthy digestive system and will also help keep you feeling full longer.

Ingredients:
10 ounces baby spinach, rinsed
4 hard-boiled eggs, sliced
1 1/2 cups halved cherry tomatoes
2 medium cucumbers, thinly sliced
1 cup sliced mushrooms
1 large green bell pepper, diced
1 15-ounce can low sodium white beans, rinsed and drained
4 spring onions, white and green, thinly sliced
1/3 cup avocado oil
3 tablespoons apple cider vinegar
1 tablespoon spicy brown mustard
1/4 teaspoon ground white pepper

Directions:

  1. In a large bowl, toss together the first 7 ingredients. If you plan on making this ahead of time, keep the ingredients separate until you are ready to mix the salad.
  2. In a small bowl or small mason jar, add the onions, oil, vinegar, mustard and white pepper. Mix or shake to combine. Pour the dressing over the salad just before serving.
