Slow cooker sweet potato salad

Ingredients

2 tablespoons chopped green onion
1/3 cup apple cider vinegar
2 tablespoons molasses
1 tablespoon packed brown sugar
1/3 cup water
1/4 teaspoon chili powder
1/4 teaspoon garlic powder
1/4 teaspoon freshly ground black pepper
1/4 teaspoon salt
4 medium sweet potatoes, peeled and diced into 1-inch pieces
1 small head cabbage, cored and chopped

Directions

  1. In a medium bowl, mix together first 9 ingredients.
  2. Place diced sweet potatoes into a 4- to 5-quart slow cooker. Pour mixture made in step 1 over the sweet potatoes. Cover and cook on low for 5 hours.
  3. Add chopped cabbage and mix. Cover and cook on low for 1 more hour.
  4. Serve warm.
