Apples are the all-star of this salad, providing fiber, vitamins and minerals for a healthy body.
Ingredients
1 teaspoon apple cider vinegar
2 tablespoons freshly squeezed orange juice
2 teaspoons freshly squeezed lemon juice
1 tablespoon extra-virgin olive oil
2 teaspoons chopped fresh dill
1 teaspoon spicy brown mustard
1 large green apple, cut into quarters and thinly sliced
1 bulb fennel, thinly sliced
1 cup arugula
Directions
1. In a large bowl, whisk together vinegar, orange juice, lemon juice, oil, dill and mustard. Add remaining ingredients and toss until well-coated.
