Tortilla taco pie

Ask your kids to help build the layers in this dish! Studies have shown kids who help out at mealtime are more likely to maintain a healthy weight and have better self-esteem.

Ingredients

1 pound 85 percent lean ground beef
1/4 cup diced onion
1 packet (1.25 ounces) lower sodium taco seasoning
1 teaspoon canola oil
1/4 cup diced green bell pepper
1/4 cup diced red bell pepper
nonstick cooking spray
5 (10-inch) whole-grain tortillas
1 cup fat-free refried beans, divided
1 1/4 cup low-fat mild shredded cheddar cheese, divided
1 cup thick salsa (You can use mild, medium or hot), divided
1 cup cooked brown rice, divided
1 cup frozen corn, thawed and drained, divided
*optional toppings: sour cream, shredded lettuce, salsa

Directions

  1. Preheat oven to 350 F.
  2. In a small skillet, brown ground beef with diced onions over medium-high heat. Add taco seasoning according to package directions.
  3. Remove taco meat from pan. Clean pan, add oil and return to stovetop over medium-high heat. Add green and red peppers to pan. Cook for 1 to 2 minutes. Remove from heat and set aside.
  4. Spray a 10-inch round casserole with nonstick cooking spray. Place tortilla on bottom. Add 1/2 cup refried beans, one-third of the taco meat and 1/4 cup cheese. Cover with another tortilla.
  5. Add 1/2 cup salsa, 1/2 cup rice, 1/2 cup corn, 1/4 cup pepper mixture and 1/4 cup cheese. Cover with another tortilla.
  6. Add remaining refried beans, one-third of the taco meat and 1/4 cup cheese. Cover with another tortilla.
  7. Add remaining salsa, rice, corn, peppers and 1/4 cup cheese. Cover with the last tortilla.
  8. Add remaining taco meat and cheese. Cover and bake for 30 minutes. Remove cover and return to oven to bake for 5 minutes.
  9. Allow to cool 5 minutes before cutting into 8 pieces (as you would a pie).
  10. Add optional toppings, if desired*. Serve warm.

To please vegetarian palettes, swap the meat in this recipe for black beans! In a small pan, heat one can of low-sodium black beans with the diced onions over medium-high heat. Add taco seasoning according to package directions. Cook for 2 to 3 minutes, set aside and continue with step 4.
