Adding spinach to your lasagna provides plenty of vitamin A for healthy skin and eyes.
Ingredients
9 servings lasagna noodles, cooked according to package directions
2 cups fat-free cottage cheese
nonstick cooking spray
2 cups marinara sauce
2 cups shredded part-skim mozzarella cheese
2 pounds fresh spinach, chopped
Directions
Preheat oven to 375 F.
Place cottage cheese in blender. Blend until smooth. Set aside.
Spray a 9-by-13-inch pan with nonstick cooking spray.
Spread about 1/2 cup of marinara sauce on the bottom of the pan.
Arrange 1/3 of noodles in a single layer. Cover noodles with 1/3 of cottage cheese, then 1/3 of marinara sauce and 1/3 of spinach. Top with 1/3 of mozzarella cheese. Repeat two more times, until all ingredients are gone.
Cover with foil and bake in oven for about 30 to 40 minutes, until a cooking thermometer inserted into the middle of dish reads 165 F.
Remove foil and return to oven for about 5 minutes to brown cheese slightly.
Remove from oven and let cool for 10 to 15 minutes. Cut into 12 squares.
