Microwave cinnamon banana bread

This cozy dessert is packed with fiber and potassium. It is higher in calories and carbohydrates, so occasionally enjoy one serving and savor every bite!


nonstick cooking spray
2 tablespoons whole wheat flour
1 tablespoon unbleached all-purpose flour
1 tablespoon dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon ground cinnamon
1 large egg
1 tablespoon skim milk
1 tablespoon unsweetened applesauce
1/4 teaspoon vanilla extract
1 small banana, peeled and mashed


  1. Spray a microwave-safe coffee mug or small dish (1 cup size) with nonstick cooking spray.
  2. In a small bowl, combine the flours, brown sugar, baking powder and cinnamon.
  3. Add the remaining ingredients and combine well.
  4. Pour the mixture into the prepared coffee mug or small dish. Microwave for 90 seconds. Enjoy!
