Cranberry-pecan bread

Cranberries can help to keep you healthy! They contain nutrients that may help to fight cancer, lower blood pressure and even prevent pesky little problems like urinary tract infections (UTIs).

Ingredients

1 cup water (110 to 115 F)
1 1/2 tablespoons canola oil
1 1/2 cups bread flour
1 1/2 cups whole-wheat bread flour (made with hard red spring wheat)
1 1/2 tablespoons dry milk
1 1/2 tablespoons sugar
1 teaspoon salt
1 cup dried cranberries
1 cup pecans, chopped
1 3/4 teaspoons active dry yeast
nonstick cooking spray

Directions

  1. Put first 10 ingredients in bread machine. Set on dough cycle.
  2. Preheat oven to 200 F.
  3. Remove dough from bread machine pan and place in loaf pan coated with nonstick cooking spray.
  4. Once preheated, turn oven off. Place dough in oven for 30 to 45 minutes, until dough has doubled in size. Remove from oven. Set aside.
  5. Preheat oven to 350 F. Once preheated, bake dough for 30 minutes.
  6. Remove bread from pan and let cool on a wire rack for about 1 hour.
  7. Slice and serve.

Makes 16 servings

What if I don't have a bread machine?

Please refer to the following alternative recipe if you do not have a bread machine, as you can make this recipe by hand.

If you want your bread machine to start while you are away, set it on delay cycle. Add the ingredients in the order listed. To prevent the yeast from touching the liquid too early, use a spoon to make a shallow hole in the dry ingredients at the top. Sprinkle the yeast in the hole.
