Apple coffee cake

Heart Smart Low Sodium

Apples and raisins keep this cake moist — more flavor with less fat!

Ingredients

5 cups cored, peeled and chopped apples (such as Jonathan or Granny Smith)
1 cup sugar
1 cup raisins
1/2 cup chopped pecans
1/4 cup vegetable oil
2 teaspoons vanilla extract
1 large egg
2 cups all-purpose flour
1 teaspoon baking soda
2 teaspoons ground cinnamon

Directions

  1. Preheat oven to 350 F.
  2. Lightly coat a 9-by-13-inch cake pan with nonstick cooking spray.
  3. In a large mixing bowl, combine apples, sugar, raisins and pecans. Mix well. Cover and let stand at room temperature for 30 minutes.
  4. Add oil, vanilla and egg. Stir.
  5. In a medium mixing bowl, combine flour, baking soda and cinnamon. Mix. Add flour mixture to apple mixture, one-third at a time. Stir just enough to moisten dry ingredients.
  6. Scoop batter into prepared pan. Bake for 35 to 40 minutes.
  7. Cool 5 to 10 minutes, slice and serve.
