Warm baguette with caramelized onion, cheese and apple

This single-serving appetizer makes it easy to manage portion size ― one and done!

Ingredients

2 tablespoons avocado oil
4 large sweet onions, thinly sliced and rings separated
1 whole-grain baguette, cut into 30 slices
10 ounces cheddar cheese (block cheese), sliced into 30 1/8-inch slices
1 large apple
2 tablespoons fresh lemon juice
30 basil leaves

Directions

  1. Preheat oven to 350 F. Line a large baking sheet with parchment paper. Set aside.
  2. In a large skillet, heat oil over high heat. Add onion and cook for 15 minutes, stirring often. Reduce heat to low and cover. Cook for 15 to 30 minutes, until caramelized, stirring every 5 minutes.
  3. Place baguette slices on lined baking sheet. Top each with 2 tablespoons caramelized onion and 1 slice of cheese. Bake 7 to 9 minutes or until cheese is melted.
  4. Meanwhile, cut apple into quarters and remove the core. (Compost the core.) Slice apple quarters into thin slices and sprinkle with lemon juice to prevent browning.
  5. Remove baguette slices from oven. Add 1 apple slice and basil leaf to each. Enjoy warm.
