Sweet potatoes are a good source of vitamin A, which can help keep your eyes and skin healthy.

2 medium sweet potatoes (each 5-inches long), peeled and cut into 1/4-inch slices (You should get 20 rounds from each sweet potato.)
1 1/2 tablespoons extra-virgin olive oil
1 teaspoon garlic powder
1/2 teaspoon fresh ground black pepper
1/2 teaspoon paprika


  1. Preheat oven to 450 F.
  2. Pour olive oil into a medium bowl. Add the garlic powder, black pepper and paprika. Stir to combine. Add the sweet potato rounds and toss until well-coated.
  3. Place rounds on a large, ungreased baking sheet in a single layer. Bake for 10 minutes. Flip each round and bake for another 7 to 10 minutes, until tender.
