Let your kids help stack these mini burgers! These burgers make a good appetizer that may help you not overeat at mealtime.
Ingredients:
1/4 pound lean (93% lean) ground beef
4 slices whole-grain bread, cut into 6 circles per slice (use a small cookie or biscuit cutter)
3 slices of Swiss cheese, each slice cut into 8 pieces
12 small thin onion slices
12 hamburger dill pickle slices
6 cherry tomatoes, cut in half
Directions:
1. Form hamburger into 12 1-inch patties.
2. Place patties on a microwave-safe plate and cover with a paper towel or napkin. Microwave on high for 1 to 2 minutes, until no longer pink.
3. For each mini burger, place 1 cooked hamburger patty on top of one bread circle. Top with a slice of cheese, a slice of onion, 1 pickle slice, 1 cherry tomato half and finish with a bread circle.
4. Secure burger with a toothpick.
