    If you haven’t tried roasting your vegetables, you’re in for a treat! Avoid boredom in your healthy lifestyle by trying new ways to prepare healthful foods.


    4 cloves garlic, minced
    1 1/2 teaspoons extra-virgin olive oil
    1 tablespoon fresh lime juice
    2 teaspoons lime zest
    1/4 cup chopped fresh cilantro
    1 1/2 pounds (about 6 cups) cauliflower florets


    1. Preheat oven to 450 F.
    2. In a gallon-size zip-close bag, combine the garlic, olive oil, lime juice, lime zest and cilantro. Seal bag and shake until well-mixed. Add cauliflower, seal bag and shake once more until cauliflower is well-coated. Pour into a medium-size casserole dish.
    3. Bake for 20 to 30 minutes, until lightly browned. Cauliflower is done when florets are tender.
    4. Serve warm.

    To add color, variety and even more nutrition to this dish, swap in 3 cups of broccoli florets for 3 cups of the cauliflower.
