Heart Smart Low Sodium

Adding spinach to your lasagna provides plenty of vitamin A for healthy skin and eyes.

Ingredients

  • 9 servings lasagna noodles, cooked according to package directions
  • 2 cups fat-free cottage cheese
  • nonstick cooking spray
  • 2 cups marinara sauce
  • 2 cups shredded part-skim mozzarella cheese
  • 2 pounds fresh spinach, chopped

Directions

  1. Preheat oven to 375 F.
  2. Place cottage cheese in blender. Blend until smooth. Set aside.
  3. Spray a 9-by-13-inch pan with nonstick cooking spray.
  4. Spread about 1/2 cup of marinara sauce on the bottom of the pan.
  5. Arrange 1/3 of noodles in a single layer. Cover noodles with 1/3 of cottage cheese, then 1/3 of marinara sauce and 1/3 of spinach. Top with 1/3 of mozzarella cheese. Repeat two more times, until all ingredients are gone.
  6. Cover with foil and bake in oven for about 30 to 40 minutes, until a cooking thermometer inserted into the middle of dish reads 165 F.
  7. Remove foil and return to oven for about 5 minutes to brown cheese slightly.
  8. Remove from oven and let cool for 10 to 15 minutes. Cut into 12 squares.
  9. Serve warm.
