United Hospital, part of Minneapolis-based Allina Hospitals & Clinics, wanted to do better, so it switched its food vendor to one that would operate on a room-service model. Instead of mass preparing food and delivering trays at times designated by the unit, the new vendor, Gaithersburg, Md.-based Sodexo, prepares meals individually that patients order from a menu.
