Watermelon and herbed goat cheese bites

Watermelon is 92 percent water, helping you to meet your goal of consuming 6 to 8 cups of water daily.

Ingredients

1 small watermelon, cut into 1-inch-thick slices (You will not use the whole melon.)
4 ounces goat cheese
3 tablespoons chopped fresh basil
16 small fresh basil leaves (garnish)

Directions

  1. Using a biscuit cutter, cut out 16 rounds from the slices of watermelon. (Place extra watermelon in an air-tight container and store in the refrigerator for another use.) Using a spoon, scoop out a small amount from the center of each round, being careful not to scoop all the way through.
  2. In a small bowl, combine the cheese and basil. Mix. Scoop a small amount of the mixture into the indentation of each watermelon round.
  3. Garnish each round with a basil leaf and enjoy!
