Chicken hominy soup

Warm up with this soup during the cold winter season! It contains nutrients that can help to clear congestion and prevent inflammation.

Ingredients

1 1/2 tablespoons extra-virgin olive oil
1 cup diced yellow or white onion
2 stalks celery, diced
3 cloves garlic, minced
1/8 teaspoon red pepper flakes
1/4 cup cilantro leaves
6 cups low-sodium vegetable broth
3 cups chopped cooked chicken breast
1 15.5-ounce can white hominy, drained
1 1/2 cups shredded iceberg lettuce
1 radish, thinly sliced

Directions

  1. In a large pan, heat oil over medium-high heat. Add onion and celery. Stir. Cook 4 to 5 minutes. Add garlic, red pepper flakes and cilantro. Stir. Cook until cilantro has wilted (less than 60 seconds).
  2. Add broth, chicken and hominy. Stir. Bring to a boil, then turn down heat to simmer for 3 to 5 minutes.
  3. Garnish with shredded lettuce and sliced radish. Serve warm.
