    Sweet potato hash Gluten Free Low Sodium

    Sweet potatoes are an excellent source of vitamin A, which is a nutrient needed for healthy eyes, skin and hair.


    1 5-inch sweet potato, peeled and grated
    1/4 teaspoon freshly ground black pepper
    2 tablespoons canola oil


    1. In a medium bowl, season grated sweet potato with black pepper. Toss.
    2. Heat canola oil in medium frying pan over medium-high heat. Add sweet potatoes and cover. Cook 3 to 5 minutes or until lightly browned.
    3. Flip potatoes, cover and continue to cook for another 4 to 6 minutes or until lightly browned.
    4. Serve warm.
