    nonstick cooking spray
    2 tablespoons extra-virgin olive oil
    1 1/2 cups chopped onion
    5 cloves garlic, minced
    4 pounds frozen green beans
    2 cups low-sodium vegetable broth
    1 1/4 teaspoons freshly ground black pepper
    1 1/4 teaspoons fresh lemon peel


    1. Spray the inside of a slow cooker with nonstick cooking spray.
    2. In a medium skillet, heat oil over medium-high heat. Add onion and garlic. Cook, stirring frequently, for 3 to 4 minutes. Add onions and garlic to the slow cooker. Add green beans and broth. Stir until well combined. Cook on low for 4 hours.
    3. Add pepper and lemon peel. Toss with two large spoons. Serve warm.
