Heart-smart gravy

Heart Smart Gluten Free Low Sodium

Condiments (gravy, mayonnaise, sauces) are known for being high in salt (sodium), fat or both. Unlike typical gravy recipes, this one is the perfect pairing for your heart-smart meal plan!

Ingredients

2 cups water
1 small onion, cut into 4 pieces
1 medium carrot, cut into 4 pieces
1 medium stalk celery, cut into 4 pieces
2 tablespoons chopped fresh parsley
4 teaspoons low-sodium dry bouillon (any flavor)
1/8 teaspoon freshly ground black pepper
1/4 teaspoon smoked paprika
2 tablespoons water
2 tablespoons cornstarch

Directions

  1. In a medium saucepan, combine 2 cups water with onion, carrot and celery. Bring to a boil, turn down heat and simmer for 15 to 20 minutes.
  2. Remove vegetables and pour liquid into a large liquid measuring cup. If liquid does not reach 2 cups, add water as needed. Return liquid to the pan. Add parsley, bouillon, black pepper and smoked paprika. Stir and bring back to a boil.
  3. In a small bowl, combine 2 tablespoons water and cornstarch. Whisk to combine and add to the pan. Boil for 1 to 2 minutes, stirring continuously to prevent burning, until gravy reaches desired consistency.
  4. Serve over mashed potatoes or meat of your choice.* Enjoy!
