Grilled corn with seasoned butter

Looking for a gluten-free side dish? Sweet corn is naturally gluten free and a crowd pleaser in the summer months.

Ingredients

12 ears of sweet corn
1/2 cup unsalted butter, softened
1/4 cup fresh chopped parsley
1/2 teaspoon garlic powder

Directions

  1. Remove the first two layers of husks from corn cobs. Soak cobs (with one layer of husk) in water for 15 minutes, making sure cobs are completely under the water.
  2. Blend together the softened butter, chopped parsley and garlic powder. Cover and refrigerate until ready to use.
  3. Preheat grill to medium heat.
  4. Remove corn from water, shaking off excess water. Gently pull back the tops of the husks to remove the silk. Cover ends of cobs with husks again.
  5. Place corn cobs on grill over direct heat, turning every 2 minutes to prevent charring. After 5 to 6 minutes, move the cobs to indirect heat (top rack or side of grill), cover grill and allow to cook for another 15 minutes.
  6. Remove corn cobs from grill with tongs and allow to cool for a few minutes. Remove husks.
  7. Serve warm with chilled seasoned butter.

For the best flavor, eat sweet corn the same day you buy it. If you need to store it before eating it, keep the cobs in the husks and place them in the refrigerator - the flavor is better preserved when kept cold.
