Garlic zucchini and tomato sauté

To get the full health benefits of zucchini, eat the skin and seeds too! They contain lutein and zeaxanthin (antioxidants, which prevent cell damage) to promote healthy eyes and vision.

Ingredients

2 tablespoons extra-virgin olive oil
1 cup diced sweet onion
3 medium zucchini, diced into 1/2-inch pieces
1 pint cherry tomatoes, cut into halves
3 cloves garlic, minced
1/2 teaspoon freshly ground black pepper
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh basil

Directions

  1. In a medium skillet, heat oil over medium-high heat. Add onion, stir and cook for 3 to 5 minutes.
  2. Add zucchini, tomatoes, garlic and black pepper. Stir. Cook for 3 to 5 minutes.
  3. Remove from heat. Stir in oregano and basil.
  4. Serve warm.
