    Warm radicchio and arugula salad with walnuts Gluten Free Low Sodium

    The topper on this salad gives more than a crunch! Walnuts are one of the few plant-based sources of heart-healthy omega-3 fatty acids!


    1/2 teaspoon spicy brown mustard
    1 tablespoon apple cider vinegar
    3 tablespoons extra-virgin olive oil
    1 tablespoon minced red onion
    2 garlic cloves, minced
    1/4 teaspoon freshly ground black pepper
    nonstick cooking spray
    1 cup chopped walnuts
    4 cups chopped fresh radicchio
    2 cups fresh arugula
    *optional: dried cranberries (for garnish)


    1. In a small bowl, whisk together mustard and vinegar. Drizzle in olive oil, while whisking. Add onion, garlic and black pepper. Whisk. Set aside
    2. Heat a large skillet over medium-high heat. Spray skillet with nonstick cooking spray. Add walnuts, stirring, and cook until lightly browned. Add radicchio, stir and cook for 2 to 3 minutes. Add arugula, stir and cook for 1 to 2 minutes. Transfer to a large bowl.
    3. Add dressing (made in step 1) and toss until well-coated. Garnish with dried cranberries, if desired.* Enjoy!
