    This salad is filled with fresh ingredients! Purchase produce at its peak ripeness to enjoy the benefits of nutrient-dense fruits, vegetables and herbs!


    3 tablespoons non-fat Greek yogurt
    2 tablespoons fresh lemon juice
    1 large tomato, diced
    1 1/2 tablespoons chopped fresh dill weed
    1 1/2 tablespoons chopped fresh basil
    1 1/2 tablespoons chopped fresh chives
    1 tablespoon honey
    1/8 teaspoon salt
    1/4 teaspoon ground coriander
    1 cup frozen peas, thawed
    1 cup diced celery
    1 cup baby arugula
    1 cup baby spinach


    1. To make dressing, add first 9 ingredients to a blender. Blend on high until smooth. Pour into a small bowl, cover and place in refrigerator.
    2. In a medium bowl, combine peas, celery, arugula and spinach. Toss. Cover and place in refrigerator.
    3. Just before serving, pour dressing over salad. Toss until well-coated. Serve chilled.
