Curry cauliflower salad

Tomatoes contain vitamin C but did you know cauliflower does too? Vitamin C can help boost your immunity to beat colds throughout the year.

Ingredients

3 cups chopped cauliflower florets
2 medium tomatoes, chopped and slightly mashed
1 garlic clove, minced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt (or more to taste*)
1/2 teaspoon freshly ground black pepper, or more to taste*
optional: 2 teaspoons cumin
1/2 teaspoon turmeric
1 teaspoon lemon juice (or more to taste*)
1 tablespoon chopped cilantro (or more to taste*)

Directions

  1. Preheat oven to 375 F.
  2. In a large bowl, combine all ingredients except lemon juice and cilantro. Toss until well-combined.
  3. Pour salad mixture into an 8-by-8-inch pan. Bake for 20 to 25 minutes.
  4. Top with lemon juice and cilantro. Enjoy!
