Cranberry salad
Cranberries are good for you! They contain phytochemicals which may help lower your risk for many types of cancer.
Ingredients
1 cup chopped fresh cranberries
2 tablespoons sugar
2 large apples, peeled, cored and chopped
1 tablespoon fresh lemon juice
3 celery ribs, thinly sliced
1/2 cup chopped walnuts
1/4 cup light mayonnaise
Directions
- In a large bowl, toss cranberries and sugar together. Set aside.
- Place the chopped apple in a medium bowl and sprinkle with lemon juice to prevent browning.
- Add the apples, celery, walnuts and mayonnaise to the cranberry mixture. Toss to combine.
- Cover and chill in refrigerator for at least 2 hours.
- Serve chilled.
