Vegetarian pita pizza

This meatless pizza is fun to make and eat! Eating vegetarian once a week can help you focus on packing even more fruits and vegetables into your meal.

Ingredients

1 cup no-salt-added tomato sauce
1 teaspoon Italian seasoning
4 whole pita breads (6 inches in diameter)
1 cup baby spinach
1 1/3 cups sliced mushrooms
4 tablespoons diced red onion
4 teaspoons chopped green olives
4 teaspoons chopped black olives
8 ounces fresh mozzarella (You can also use 2 cups shredded.*)

Directions

  1. Preheat oven to 425 F.
  2. In a small bowl, combine tomato sauce and Italian seasoning. Stir. Allow to set for 10 minutes.
  3. Place pitas on a large baking sheet. Top each pita with 1/4 cup tomato sauce mixture, 1/4 cup spinach, 1/3 cup mushrooms, 1 tablespoon onion, 1 teaspoon green olives and 1 teaspoon black olives. Place 2 ounces mozzarella cheese on each.
  4. Bake for 10 to 15 minutes or until cheese is melted. Serve warm.
