Lightly breaded baked trout

Many types of fish are known to be high in omega-3 fatty acids, but did you know trout also is a good source of several B vitamins? B vitamins help your body to "unlock" and use energy from the foods you eat.

Ingredients

2 5-ounce trout fillets
1 teaspoon extra-virgin olive oil
2 tablespoons whole-grain bread crumbs
1/4 teaspoon freshly ground black pepper
1 tablespoon dried parsley flakes

Directions

  1. Preheat oven to 375 F.
  2. In a small baking pan, place the fish fillets skin-side-down.
  3. Lightly coat the fish with oil, then sprinkle with bread crumbs, black pepper and parsley.
  4. Bake uncovered for 10 to 12 minutes or until fish flakes easily with a fork. 
  5. Serve warm.

Baking time will depend on the thickness of the trout fillets. Allow an extra 3 to 5 minutes for baking if the fillets are slightly thicker.
