Lentil and wild rice tacos

Eating a meatless meal one to two times each week can help reduce your risk of heart disease. This vegetarian taco is a tasty way to do just that!

Ingredients

1 cup lentils, uncooked
1 cup wild rice, uncooked
1 1/4 cups diced onion
7 garlic cloves, minced
6 cups water
2 tablespoons chili powder
1/2 teaspoon smoked paprika
2 teaspoons ground cumin
1/2 teaspoon freshly ground black pepper
16 6-inch whole-grain tortillas

Directions

  1. Combine first 9 ingredients in a 3- to 5-quart slow cooker. Stir.
  2. Cover and cook for 3 to 4 hours on high or 5 to 7 hours on low. Stir 1 to 2 times in the last hour of cooking.
  3. Scoop 1/4 cup of taco mixture into each tortilla. Serve warm.
