Grilled flatbread pizza

Like olive oil, olives are high in healthful fats for a healthy heart. Olives also contain vitamin E, an antioxidant that helps to fight against cancer.

Ingredients

nonstick cooking spray
2 pieces flatbread
1 1/2 cups feta cheese crumbles, divided
1 14.5-ounce can diced tomatoes, drained
1 1/2 cups chopped arugula
1 6.5-ounce can or jar artichoke hearts, chopped
1 12-ounce jar roasted red peppers, chopped
1/2 cup chopped pitted black olives

Directions

  1. Spray grill grate with nonstick cooking spray. Preheat grill to medium heat.
  2. Place flatbreads on grill and cook for 2 to 3 minutes. Be careful not to let burn. Remove from grill and let cool for 3 to 5 minutes.
  3. Sprinkle flatbread with half of feta cheese. Then top with tomatoes, arugula, artichokes, red peppers and olives. Sprinkle with remaining cheese.
  4. Return flatbreads with toppings to grill. Cover and cook for 3 to 5 minutes, being careful not to let burn.
  5. Cut each flatbread into 12 slices. Serve warm.
