    Cabbage and beef stir-fry Heart Smart Gluten Free Low Sodium

    Cabbage is packed with antioxidants ("cancer-fighters") and can also help to lower LDL cholesterol ("bad cholesterol").

    Ingredients

    1 pound extra-lean (95 percent) ground beef
    1 1/2 cups thinly sliced sweet onion
    2 cups grated carrots
    1 medium head cabbage, chopped
    3 cloves garlic, minced
    1 teaspoon ground ginger
    1/2 teaspoon sea salt

    Directions

    1. Brown ground beef in a large skillet over medium-high heat. (You can also brown the ground beef in a wok.)
    2. When beef is almost done, add onions and carrots. Cook for 5 minutes, until slightly softened.
    3. Add cabbage and spices. Cook for another 10 minutes or until cabbage is softened.
    4. Serve warm.

    This quick dish can also be made in your slow cooker! After browning the ground beef, add it to a large bowl with the vegetables. Add spices and mix well. Put the mixture in a slow cooker and cook on low heat for 3 to 4 hours.
