    Make these tasty tacos for your next meatless meal! The beans provide your body with plenty of iron for healthy hair, skin and eyes.

    Ingredients

    8 corn tortilla shells
    1 15-ounce can pinto beans
    8 leaves green leaf lettuce, cut or torn into pieces
    1 cup shredded cheddar cheese
    *optional toppings: salsa, sour cream

    Directions

    1. Preheat oven to 350 F.
    2. Place tortillas on a baking sheet. Bake 4 to 6 minutes or until lightly browned.
    3. While tortillas bake, pour beans into a microwave-safe bowl. Cover and cook on high for 2 minutes.
    4. Remove tortillas from oven. Divide beans, lettuce and cheese evenly between tortillas. Top with salsa and sour cream, if desired.*
    5. Serve warm.
