Secret ingredient brownies

This recipe has a secret ingredient, zucchini, giving these brownies a boost of potassium for a healthy blood pressure.

Ingredients

nonstick cooking spray
2 tablespoons unsalted butter
1 cup semi-sweet chocolate chips
1 cup sugar
3 egg whites
1 1/4 teaspoon vanilla extract
1 large zucchini, grated (about 1 1/3 cups grated)
1/2 cup all-purpose flour
1/2 teaspoon baking powder

Directions

  1. Preheat oven to 350 F. Spray an 8-by-8-inch baking pan with nonstick spray. Set aside.
  2. In a small saucepan, heat butter and chocolate chips over low heat. Stir until melted and remove from heat. Add sugar, egg whites and vanilla. Stir. Fold in grated zucchini.
  3. In a medium bowl, combine flour and baking powder. Add chocolate mixture (made in step 2) and stir until just combined. Pour the mixture into the prepared pan.
  4. Bake for 25 to 30 minutes or until a toothpick inserted into the center of the brownie comes out clean.
  5. Allow to cool slightly, cut in squares and enjoy! Store leftovers in an air-tight container.
