    These little treats are perfectly portioned with just enough sweetness to satisfy a craving.


    nonstick cooking spray
    1/2 cup cocoa powder
    1 cup all-purpose flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    2 tablespoons butter, melted
    3 egg whites
    1 1/2 cups sugar
    1 cup unsweetened applesauce
    1 teaspoon vanilla extract


    1. Preheat oven to 325 F.
    2. Spray a mini muffin pan with nonstick cooking spray.
    3. In a medium bowl, sift together cocoa powder, flour, baking powder and salt.
    4. In a large bowl, beat together melted butter, egg whites and sugar until just blended. Stir in applesauce and vanilla. Stir in flour mixture until well-blended.
    5. Scoop 1 tablespoon batter into each mini muffin cup.
    6. Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
    7. Cool for 5 minutes and remove from muffin tin. Serve immediately or cover and store at room temperature. Do not refrigerate.
