Coconut almond bites

Gluten Free Low Sodium

This dessert is best enjoyed as an occasional treat, due to the high saturated fat content. Saturated fats may increase your risk for obesity and heart disease.

Ingredients

1/4 cup coconut cream
1/3 cup unsweetened shredded coconut, divided
1 1/2 tablespoons unsweetened cocoa powder
2 teaspoons sugar
16 whole, unsalted roasted almonds, coarsely chopped

Directions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a medium bowl, combine coconut cream, 1/4 cup shredded coconut, cocoa powder and sugar. Mix.
  3. Sprinkle remaining coconut and chopped almonds on a plate.
  4. For each bite, form 1 teaspoon of mixture (made in step 2) into a ball, then roll in coconut-almond mixture. Place bites on the prepared baking sheet and chill in the refrigerator for at least 1 hour. Enjoy!
