Chocolate-dipped mandarin oranges

Although known for being an excellent source of vitamin C, oranges also contain magnesium, calcium, phosphorus, potassium and folate for healthy bones, hair, skin and eyes.

Ingredients

parchment paper
1/4 cup dark chocolate chips
1 teaspoon canola oil
4 fresh mandarin oranges, peeled and separated

Directions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a small microwave-safe bowl, combine chocolate chips and oil. Microwave on high for 20 seconds at a time, stirring in between, until melted.
  3. Dip one end of each orange segment into the melted chocolate and place on prepared baking sheet. 
  4. Place in the refrigerator for 20 minutes or until chocolate hardens. Cover(to prevent oranges from drying out) and store in the refrigerator until ready to eat.
  5. Enjoy!
