Apple spice cake

Apples contain soluble fiber and potassium, both of which help to keep your heart healthy.

Ingredients

nonstick cooking spray
1/2 cup canola oil
2 large eggs
1/2 cup unsweetened applesauce
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 cup whole-wheat flour
1 cup all-purpose flour
1 1/2 teaspoons ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
4 cups diced baking apples (Honeycrisp, Granny Smith, Cortland, Braeburn or Gala), unpeeled

Directions

  1. Preheat oven to 350 F. Spray a 9-by-13-inch pan with nonstick cooking spray. Set aside.
  2. In a large mixing bowl, beat oil and eggs until foamy. Add remaining ingredients except the diced apples. Stir until just combined. Add diced apples and stir until apples are coated. (Batter should be thick.) Pour batter into prepared pan.
  3. Bake for 35 to 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
  4. Allow to cool for 10 minutes before cutting and serving. Enjoy!
